Pick as many as you like. Full-size originals are kept for press downloads; smaller versions are made for the page. After they upload, open the Photos tab to add titles and captions.
Tick photos, then move them as a group.
Categories become the filter tabs on the public page. Deleting one doesn't delete photos; they just become uncategorized.
